Strawberry Cream Cheese Frosting That Actually Holds Its Shape

Description

Strawberry cream cheese frosting made with real strawberries. It’s creamy, tangy, and perfect for cupcakes or layered cakes.


Ingredients

1 cup chopped fresh strawberries

1 tablespoon granulated sugar

8 tablespoons (4 ounces) unsalted butter, at room temperature

8 ounces cream cheese, at room temperature

1 teaspoon vanilla extract

2 1/2 cups powdered sugar


Instructions

1. Combine the fresh strawberries, sugar and a splash of water in a small saucepan. Turn the heat to medium low and stir occasionally. Continue cooking until the strawberries reduce to 1/4 cup and resemble a thick jam.

2. Transfer the strawberry mixture to a separate bowl and let it cool completely.

3. In another bowl, beat the butter and cream cheese until smooth using an electric mixer.

4. Add the cooled strawberry mixture and vanilla. Beat again until well combined.

5. Slowly add the powdered sugar while continuing to beat until smooth and creamy.

6. Use immediately or store in the fridge. You can also freeze it for up to 3 months.

Notes

You may add a drop or two of red food coloring if you prefer a deeper pink shade.

To use frozen frosting, defrost in the fridge overnight and re-whip before using.
