Easy lemon cake mix cookies made with just 5 ingredients. These soft, chewy cookies are full of citrus flavor and perfect for spring!
Ingredients

15.25 ounce box lemon cake mix
½ cup vegetable oil
2 large eggs
1 lemon (zest & juice)
¼ cup powdered sugar
Instructions
1. Preheat oven to 350°F. Line a baking sheet with parchment.
2. Mix cake mix, oil, eggs, lemon juice, and zest until combined.
3. Refrigerate dough 15 minutes if sticky.
4. Scoop dough, roll in powdered sugar, place on baking sheet.
5. Bake 9–11 minutes until set but not browned.
6. Cool on rack before serving.
Notes
Freeze baked cookies for up to 3 months.
Dough can also be frozen before baking for make-ahead prep.
