Description

This banana cake made from cake mix is moist, full of banana flavor, and finished with a light banana cream whipped frosting. It’s easy to make and perfect for any occasion.


Ingredients

16.25 ounce box white cake mix PLUS ingredients listed on the box (use milk instead of water)

½ teaspoon cinnamon

½ teaspoon ground nutmeg

1 teaspoon baking soda

¼ teaspoon salt

Milk, according to box instructions

3 medium ripe bananas, mashed or broken into chunks

Frosting:

1 cup milk

3.4 ounce box banana cream instant pudding

1 cup heavy whipping cream


Instructions

1. Preheat oven to 350°F. Grease a 13×9 baking pan.

2. In a large mixing bowl, whisk together the dry cake mix, cinnamon, nutmeg, baking soda, and salt.

3. Replace the water on the box with milk. Use whole eggs instead of egg whites if the box allows. Add oil as directed. Add mashed bananas.

4. Beat on low speed for 30 seconds, then on medium-high for 2 minutes until fully blended.

5. Pour batter into prepared pan. Bake for 40 to 45 minutes, or until the center springs back when lightly touched. Let the cake cool completely.

6. For frosting, whisk milk and pudding together in a bowl. Refrigerate until thickened.

7. In another bowl, whip the heavy cream to stiff peaks.

8. Gently fold the pudding into the whipped cream until smooth. Spread over cooled cake.

9. Garnish with banana slices before serving if desired.

Notes

Use ripe bananas with brown spots for the best flavor.

Wait to add banana slices until right before serving to avoid browning.

Let the cake cool completely before adding frosting.
