Description
This patriotic American Cake is light, fluffy, and topped with cream cheese frosting. Decorated like the American flag, it’s festive and delicious.
Ingredients
½ cup unsalted butter, softened
1 cup granulated sugar
½ cup honey
2 large eggs
2 tsp vanilla extract
¾ cup Greek yogurt
1 ¼ cups white whole wheat flour
1 cup all-purpose flour
1 tsp baking soda
½ tsp kosher salt
¾ cup plus 2 tbsp milk
12 oz reduced-fat cream cheese
6 tbsp unsalted butter
1 ⅓ cups powdered sugar
¼ cup Greek yogurt
1 tsp vanilla extract
1 cup fresh blueberries
2–3 cups sliced strawberries
Instructions
1. Preheat the oven to 325°F. Grease and flour an 11×17-inch half-sheet pan.
2. Cream butter, sugar, and honey until fluffy.
3. Add eggs and vanilla, then Greek yogurt, mixing well.
4. In another bowl, mix flours, baking soda, and salt.
5. Alternate adding the flour mixture and milk to the wet ingredients.
6. Spread batter into pan, bake 18-22 minutes. Cool completely.
7. Beat cream cheese, butter, powdered sugar, yogurt, and vanilla for frosting.
8. Frost the cake, then decorate with blueberries and strawberries to resemble a flag.
Notes
You can substitute all-purpose flour for the whole wheat flour but reduce milk to ¾ cup plus 1 tablespoon.
Cake and frosting can be made one day ahead.
Store leftovers in the fridge up to 3 days.
